This is a very rich, yet simple sauce. I used pappardelle pasta. I also added a garnish of minced black truffle from a jar, but you don’t need to. A drizzle of truffle oil to finish would be a nice touch, but isn’t essential.
Serves 3
Ingredients:
1tbsp Extra Virgin Olive Oil
1 garlic clove (crushed)
230ml Double Cream
60ml white wine
70g parmesan (grated)
4tsp Black Truffle & Porcini Pimp Your Mayo
Ground black pepper
Pinch of salt
Pasta
3tsp Truffle Oil (optional)
1Tbsp fresh parley (chopped)
Method:
- Cook the pasta according to the packaging’s instructions. Drain.
- Heat the olive oil over a low-medium heat in a medium saucepan. Add the garlic and cook for a minute until fragrant.
- Add the wine and let it steam for a minute or two.
- Turn the heat to low and add the cream and stir in the Pimp Your Mayo. Let his heat up gently.
- Add the cheese and whisk until melted.
- Season generously with pepper and add a pinch of salt.
- Stir in the parsley and save a little to garnish.
- Stir the sauce into the pasta, plate and garnish with parsley. Drizzle with truffle oil if using.
