Truffle Parmesan Pasta

This is a very rich, yet simple sauce. I used pappardelle pasta. I also added a garnish of minced black truffle from a jar, but you don’t need to. A drizzle of truffle oil to finish would be a nice touch, but isn’t essential.

Serves 3

 

Ingredients:

1tbsp Extra Virgin Olive Oil

1 garlic clove (crushed)

230ml Double Cream

60ml white wine

70g parmesan (grated)

4tsp Black Truffle & Porcini Pimp Your Mayo 

Ground black pepper

Pinch of salt

Pasta

3tsp Truffle Oil (optional)

1Tbsp fresh parley (chopped)

 

Method:

  1. Cook the pasta according to the packaging’s instructions. Drain.
  2. Heat the olive oil over a low-medium heat in a medium saucepan. Add the garlic and cook for a minute until fragrant.
  3. Add the wine and let it steam for a minute or two.
  4. Turn the heat to low and add the cream and stir in the Pimp Your Mayo.  Let his heat up gently.
  5. Add the cheese and whisk until melted.
  6. Season generously with pepper and add a pinch of salt.
  7. Stir in the parsley and save a little to garnish.
  8. Stir the sauce into the pasta, plate and garnish with parsley. Drizzle with truffle oil if using.
