Jerk Aubergine

Veg doesn’t have to be boring!

Of course you can marinate any veg you like. This isn’t so much a recipe as an idea, but it makes a great side dish. You can also slap a few slices in a burger bun with chipotle mayonnaise and other grilled veg or halloumi for a delicious veggie option at a bbq. 

 

Ingredients:

Aubergine (sliced longways about 1cm thick)

Either Jerk Marinade

or

Extra Virgin Rapeseed Oil/Extra Virgin Olive Oil mixed with Jerk Seasoning

Instructions:

1) Toss your aubergine in the marinade. This is best left to rest in the fridge for 1-2 hours, but if you’re in a hurry, just leave it as long as you can. It’ll still be tasty. 

2) Grill it on a medium heat until soft enough to easily stab a fork in. You can do this in the oven, on a bbq, in a grill pan or in a frying pan. You could do it in an airfryer too.
