Of course, a shortcut would be to use Lucy’s Golden Honey & Mustard Dressing, or Charlie & Ivy’s Honey & Mustard Dressing.
This makes a lot of potatoes, so adjust it if you’re cooking for fewer people.
Ingredients:
750g new potatoes, halved
1tbsp red wine vinegar
1tbsp Extra Virgin Olive Oil
4tsp Robust Wholegrain Mustard
4tsp honey
Large handful, finely chopped mint
Method:
- Boil the potatoes for about 8 mins or until easily pierced with a fork. Drain and put in a large serving bowl. Allow to cool or serve them warm.
- Mix the other ingredients in a bowl.
- Stir the potatoes through with the dressing and serve.
